One page RPGs are a little too light even for me but I have mentioned time and again my experience of a trend towards lighter rulesets.
When I decided to run a oneshot adventure for my group back in November we used FUDGE as it was simple enough for them to grasp the rules in a few minutes and the entire squad of special forces characters were created in about 15 minutes explaining the rules as we went.
So yes, I can see that. Not sure I would want to play in a pub/bar though.
